I found this recipe on a blog a while back and it took me so long to get around to trying it! But it’s amazing! You all need to try this, seriously.

The only change I made was using my food processor to shred the cauliflower, I think that made it a lot easier. Oh, and I also used slightly less cheese than suggested, I think I used around 3/4 cup. Next time I make it I will bake the crust for a little longer, maybe 17ish minutes, because I had to use a knife and fork to eat it.
I was shocked at how low cal this was when I put it in my MyFitnessPal diary. Even if I went crazy and ate the whole pizza, it’s only around 500 calories. Seriously, if you like pizza (and who doesn’t?), then you need this crust in your life!
I was really craving egg salad so I tried this recipe out, adapted from here: http://www.healthytastychow.com/2010/03/egg-salad-and-a-winner/. It was really yummy! I did not miss the mayo at all. Here’s how I made it:
2 hardboiled eggs
1/2 a container of Fage 2% Greek Yogurt
Chopped onion (you could also add celery, I just didn’t have any on hand)
Dijon mustard, salt, and pepper to taste
Mix it all together and voila! Deliciousness! I ate mine as a sandwich but you could also eat it in a tomato cup. I think next time I make it, I’ll add some avocado.
This would be an awesome way to use up leftover Easter eggs!
